So it has taken me a couple of days to adjust but I am back in the swing of things here in Uppsala. Unfortunately one of the things I brought back with my from California was some extra weight. My mom overheard some lady at her gym raving about a great diet: Vegan before 6. Pretty simple concept! 2 meals a day are vegan, the last one is whatever you want!
Makes so much sense. 2 meals of healthy, non-dairy, non-animal, non-delicious food and then one splurge meal at the end of the day!!
So today was the first day!
Breakfast was peanut butter oatmeal (make oatmeal and put peanut butter in it…), oat milk, because in Sweden they don’t really have delicious almond milk, shredded coconut, and then some frozen fruit and raisins. Perfect.
Forgot to document my lunch. It was pretty boring, I made an avocado sandwich. Toast with avocado spread all over it and maybe a little tomato on top.
Dinner I had pasta and sausage perfect!
Hopefully I will slim down and lose the weight asap and get Swedish fit.
Today also began the job search again. Oh how fun it is.
